Abstract

Grape cultivation is intensively done in Mardin, Diyarbakır and Gaziantep provinces. Grapes were collected from 3 different provinces and dried in the sun. Volatile components of dried grapes were determined by Solid Phase Micro Extraction/Gas Chromatography-Mass Spectrometry (SPME/GCMS) method. In Mardin grape sample, Hydroxy citronellal (29,58%), Diethyl phthalate (18,89%), Palmitic acid (6,92%), ?-farnesene (5,85%) and Isopropyl myristate (3,21%) volatile main component, in Diyarbakır grape sample, Ethyl palmitate (47.96%), Pentadecanolide (15.48%), Limonene (12.02%) and Ethyl octane (6.27%) volatile main component and in Gaziantep grape sample, ?-farnesene (33,55%), Cedril acetate (7,15%), Hexyl hexanoate (6,89%), Acetoin (6,72%),Ethyl octanoate (6,32%), Pelargonaldehyde (6,07%), Limonene (5,94%), ß-bisabolen (5,79%) and Eugenol (4,58%) volatile main components were detected
